We did not think we could improve on our Original Salted Caramels No1, created for Gordon Ramsay at Claridge's. But we rose to the challenge. Our Unami Salted Caramels made using an award winning blend of Welsh sea salt, Celtic seaweed and Snowdonia shitake mushrooms pack an intensity and depth that make your taste buds sing a sweet and saline epic melody perfectly tempered by Colombian dark chocolate.
What would a dinner table be without its salt and pepper, ubiquitous staples in every kitchen? Yet we rarely wonder why these are so widely combined. It was in France that salt met its inevitable spicy partner, pepper. The court of Louis XIV, precursor of classic French cuisine, viewed all Middle Eastern spices as vulgar ingredients that masked the true flavour of a dish, except pepper. Pepper earned its place on our dinner tables through the favour of the Roi-Soleil and 300 years later made it to our cult liquid salted caramels. Passion fruit, fruit of the Passiflora, inherited its name from Spanish missionaries to South America who used it as an expository aid while trying to convert the indigenous inhabitants to Christianity, drawing parallels between the parts of this pretty local flower and elements of the account of the Passion of Christ. We don’t aim to preach to anyone about our passion fruit salted caramels: just try them and find out for yourself how deliciously intense, sweet and tangy they taste.

Italians during the Renaissance served salted dishes at the same time as sugared dishes. It was not until the seventeenth century that the French created a salt-sweet divide. As Italians do it better, we followed their advice and concocted a sweet, salty and tangy chocolate showcasing an aged vinegar produced in Modena by the devoted Malpighi family since 1850.
The latest in our salted caramel creations: smoked salt caramel with pure sea salt from Anglesea smoked over oak chippings. This earthy concoction is casted in a shell of creamy milk chocolate and dusted in cocoa powder.
Our salted caramels are all lip-smacking delicious from the original ones to the balsamico, passion fruit, smoked salt or spiced figs. But we have a soft spot for our latest creation: salted caramel is blended with mint.

Since creating our famous sea salted caramels for Gordon Ramsay’s menu at Claridge's in 2002, we have pushed the boundaries of sugar, spice and all chocolate things nice. Only the most successful salted caramel ventures, dutifully vetted by volunteer fans, are allowed on our shelves, numbered by the timeline of their conception. Infinity is a serendipitous assortment of our all liquid salted caramels, original and flavoured with whimsical fruits, herbs and spices. As they all look alike, this box of liquid salted caramels is like life itself; you never know what you might get.

One of our most popular bars, our mole chili dark chocolate bar releases a complexity of flavours. This bar made by conching and refining South American ground cocoa beans with mole dances with the taste buds. It has depth, body and a mild pungency culminating in a pleasant heat. It is the balance in the multitude of ingredients in mole that gives this bar its richness and sophistication.

Our creme brulee chocolate, conched and refined in our atelier in Kent, is inspired by the traditional 18 th century French dessert. So what is creme brulee? It's velvety smooth with a rich taste of custard and vanilla interspersed with caramel nibs, this bar elevates milk chocolate to a fine flavour and breaks the mould of convention that treats milk chocolate as the poor cousin of dark chocolate.
This chocolate with dulce de leche and caramel notes is more fun: studded with nibs of sweet and salty popcorn it's the perfect accompaniment to a good film or a good book. Sit back, kick off your shoes and enjoy a blonde moment.
White chocolate is often regarded as the black sheep of the chocolate family, an overly sweet confection for children. So we revelled in creating a fine white chocolate bar enriched with mascarpone and laced with Italian flair.

This 70% dark chocolate bar is made from a blend of lightly roasted ground Trinitario beans from the Colombian regions of Huila, Tumaco and Santander. In this blend, the robustness of Santander beans is lifted by the floral notes from the Huila beans and the fruity notes from the Tumaco beans. Added cocoa nibs give a crunchy texture to this smooth intense bar that will delight any dark chocolate lover.
Crunchy caramel nibs and scrumptious lightly caramelised hazelnut nibs deserve the best milk chocolate, a milk chocolate from Colombia made with non-deodorised cocoa butter, which preserves all its flavour and lingering floral notes.
A twist on the classical orange and chocolate combination, our bar brings the scent of natural grapefruit oil, dispersed amongst little cubes of candied Mediterranean orange peel smothered in intense Colombian dark chocolate.
Our sugar free salted caramel bar is not only free of added sucrose, it is also free of added caramel flavour. Its caramel notes and sweetness, enhanced by a hint of sea salt, are created by caramelising dried milk and adding maltitol which has 50% less calories than sucrose.
