Peggy Sattler 2022 Annual Community Recognition Awards Theannual award ceremony to showappreciation for outstanding volunteers in her London West riding, was held virtually this year on March 23. This year, Peggy recognized those who displayed courage and commitment to their community despite challenges from the COVID-19 pandemic. “Londoners stand up for each other, they help each other in difficult times, and our community is better for it. I’m honoured to recognize outstanding Londoners who showed leadership in helping their neighbours and worked hard to make sure their community was supported during the pandemic,” said Sattler. The 2022 recipients are Sarvarinder Singh Dohil, Jenn Gilbert, Rick Gillespie, Margaret Hopkins, Wayne Howie, Neil McKay, Mary Morrice, Kelli Norton, Abe Oudshoorn, Tom Telfer, Megan Vandekerckhove, Jane Walker, and the West London Minor Hockey Association Board (Mike Anderson, Mark Annett, Lisa Boyce, Jeff Collins, Mark Flick, Chris Golem, Bruce Hayward, Jason Higgins, John MacDougall, Brady Parr, Shawn Phibbs, Kendra Ramer, Mike Rivard, and Kristie Roff). Here are the four recipients from the Hyde Park-Oakridge area:

and was instrumental in organizing the Oakridge Acres Charity Golf Tournament to benefit the Ronald McDonald House of Southwestern Ontario, where he also helps to prepare and serve meals for families staying in our community to be with their children receiving treatment. In addition to his work in Oakridge, Rick is a Lieutenant Governor for the district and leads initiatives that serve the entire city, including major sporting events held in London, such as the CP Open, the Canadian University/College golf championship, and Special Olympics. Neil McKay

Neil is a truly selfless mem- ber of our community. His family, like so many across Southwestern Ontario, has relied on the high quality health care services pro- vided by the Children’s Hospital at London Health Sciences Centre – with the tragic loss of their son Jacob

in 2014, a year later when their six-day-old daughter Hadley was admitted to the pediatric critical care unit, and when their daughter Eleni needed emergency dental care. Neil was motivated by his own family’s difficult times to give back and help more children and families access the same services that helped them. In 2017, he ran 132 km in 24 hours and raised over eight thousand dollars for the Children’s Health Foundation. In 2021, he set out to run 160 km in 30 hours through Neil’s Race for Kids, and raised another $11,000. Neil’s dedication is bringing comfort and support to countless families dealing with the heartbreak of a gravely ill child. Rick is a true friend to youth, and he has made London West a better place. Tom has lived in London West for many years, and has been generous with his time throughout his entire life. He has made meaningful contributions to our community through his involvement with a range of lo- cal organizations, including the Rotary Club, Royal Canadian Le- gion, Barber Shoppers, the Westmount Presbyterian Church, and the Society for Learning in Retirement. Thomas Telfer, nominated by Ernie Raftis of the George Bray Sports Association. Among his many outstanding accomplishments, Thomas has made trips to Africa and India to support polio eradication efforts. As a teacher and principal for the Forest City Program, he helped develop special education programs in Ontario’s public school system. Tom retired in 1992 and dedicates much of his time to volunteerism, remaining very active in both the London community and the global community. He has a passion for helping and is recognized by others as a friend to everyone. We are so fortunate to have him here in London West.

Sarvarinder Singh Dohil, nominated by the Guru Nanak Mission Society of London. Through his volunteer work with Guru Nanak Mission Society, where he currently serves as President, Sarvarinder has shown amazing leadership in helping his fellow Londoners. He believes that no one should sleep hungry, and has worked to build partnerships with organi- zations across the City to serve

meals to people in need, enlisting volunteers to help serve more than 500 meals in a single day at shelters around our community. He has also brought together London businesses to sponsor free pizza drives and other free meal drives in our community. Despite COVID-19 lockdowns, Sarvarinder continued to lead a strong team of volunteers to ensure they could keep providing hot meals for those in need. Sarvarinder has also organized blood donation drives, tree planting, and more. He serves as an outstanding example for everyone who would like to make a difference in their community. Rick Gillespie, nominated by

the Oakridge Acres Optimist Club. Rick has a truly extraordinary re- cord of service to our community through his work with the Optimist Club, where he has been a tireless volunteer for over 25 years. Rick has played a key role in the planning and execution of countless Optimist outreach programs, community events, and fundraising initia- tives. He has a passion for golf

Final 2022 Article With the municipal election starting in May, this will be my last article until at least November. It has been a great honour to serve this community over the past 8 years and I hope to have the support on October 24th (Election Day) to do it again. Even while a running as a candidate for office, I still serve as your local ward Councillor so please don’t hesitate to reach out with your municipal concerns and questions! Best wishes for a happy and healthy year ahead.

With the warm weather returning, neighbourhood streets will see more activity with children out reconnecting with old friends and making new ones. Over this term of Council, we have continued the implementation of our Road Safety Strategy and our community has seen a number of changes. They include new Pedestrian Crossovers, area speed limit reductions, new traffic calming measures, and greater speed enforcement in school zones. This spring we continue with our Respect the Limit campaign, an education campaign targeted at reducing speeding in our residential neighbourhoods. Part of the education campaign involves making Respect the Limit lawn signs available to residents. If you live in an area that is prone to speeding, please let me know and I’ll drop off one of these signs for you. You can also request and pick them up right at City Hall. Oakridge Optimists by Bill Adams Family Trivia

The Oakridge Optimist online Family Trivia event may outlive the pandemic. The virtual event came about in 2021 when Covid-19 health restrictions

prevented our club from holding our annual in-person Trivia Night. The online trivia was a hit with families who could play from home, so it was scheduled for this past February along with our regular Trivia Night. Covid rebounded early in the year forcing us to cancel the in- person event. The loss of our club’s major fundraiser for the second straight year was disappointing but was offset by the success of the online trivia event held on the Family Day weekend. As a result, we have decided to continue with both the virtual and in-person Trivia events for February of 2023. Youth Volunteer Recognition Program Our Oakridge Optimist Youth Volunteer Recognition Program resumed this spring as we honoured nine youth volunteers at a celebration event during National Volunteer Week. We are proud to recognize the efforts of these volunteers, especially during the pandemic. They were nominated by schools, churches and youth organizations in the Oakridge community. It wasn’t actually until her son, at age 10, expressed interest in art classes that Sheri Cappa also started to take lessons! He’s now a glass artist while Sheri’s favourite mediums are graphite, watercolour, pen and ink. She has been a member of the London Brush and Palette Club since 2009. Sheri grew up on a farm and now resides by the Sifton Bog. “Being close to nature is important for me as an artist as it provides inspiration and peace of mind. My favourite times are wandering through the woods near my home looking for creatures or interesting textures, with my sketchbook, palette, pencil and pens in hand. I enjoy observing the detail that the average person may not see. When looking around, I see the play of light on a leaf or the range of colours in the bark of a tree. The Optimist Club of Bryanston-Birr Essay Contest

by Michele Ivanouski, Scholarship Program Chair We ran our annual essay contest again this year. Students 19 years and under were invited to write about, “How Does an Optimistic Mindset Change My Tomorrow?” Each essay writer was invited to read at our meeting. Unique viewpoints made them so interesting to hear. Some highlights were, “Failure is the mother of success. To succeed you must set goals for yourself and then have faith that they can be achieved” and “In the face of adversity and difficulties in the present, staying positive and optimistic is a push against the dark tide”. At our club level, all writers received cash for participating. The top three were awarded prize money, and the top essay, written by Holly Pedlow of Medway High School, has been submitted to the Midwestern Ontario district contest for the chance to win a $2500 scholarship. All of us in Bryanston-Birr wish Holly luck in the district contest!

HPBIA Easter Scavenger Hunt by Ellen McGran, Hyde Park Business Improvement Association It was another egg-citing Easter Scavenger Hunt in Hyde Park, Uptown London! For two weeks leading into Easter, the Hyde Park, and wider London communities, hopped around the Hyde Park BIA area collecting Easter Egg stickers at participating businesses. People of all ages downloaded an Easter Passport and visited 15 Hyde Park businesses, exploring their community and finding hidden gems along the way! Participating businesses welcomed egg searchers at their retail location, giving out stickers to those who visited. Once the passports were all filled, they were submitted to the Hyde Park BIA for the chance to win one of three Easter basket prizes, valued at over $300 each! Participating businesses donated a variety of items to create three generous prize baskets for winners. Included in the baskets were Hyde Park Dollars redeemable at Hyde Park BIA stores, Unger’s Market gift cards, goodies from M&M Meat shops, skin care products, from DermEffects, colouring pages donated by Color Me Inc, and much, much more. (And chocolate, lots and lots of chocolate!)

What a grind! Nocturnal teeth grinding and clenching is a condition referred to as sleep bruxism that has more consequences for your health than you may be aware of. Nocturnal teeth grinding occurs when you clench your upper and lower jaws together while you’re asleep. Many dental professionals believe that sleep bruxism leads to Temporomandibular Joint (TMJ) dysfunctions. Approximately 15% of the population grind their teeth while they sleep. The increased amounts of pressure that are placed on the tooth surfaces and jaws leads to dental problems far worse than the simple sore jaw muscles and headaches. Research suggests that the resulting different tooth shapes and locations could lead to TMJ problems.

Hyde Park Rotary and the Pink Bicycle Project by Cindy Benning The distance for girls travelling to and from school in remote areas of Tanzania is typically over 6km each way. Not only is the distance a deterrent, the trip is unsafe. Girls may be attacked and raped as they walk between their home and school. Already at a disadvantage for education because they are responsible for much of the home care, this added challenge makes it very difficult for girls to become educated in these areas. The Rotary Club of London Hyde Park’s (RCLHP) International Committee learned about the Pink Bike Project that provides bicycles to girls travelling to school from remote villages and selected the Olmoti Secondary School for assistance. The cost of each bicycle is 175,000 Tanzanian shillings, equivalent to approximately 100 Canadian dollars. With the $2000 Canadian dollars donated by RCHP, 15 bicycles were purchased. To advertise here, please contact [email protected] What makes a sponge cake tough? Another possible reason is if the cake was over-baked. This generally causes a sponge to become dry, but this can then lead to it being dense and heavy. What ingredient makes cake spongy? Cake flour has corn starch mixed in it and it makes the cake spongy. The reason sifting is important is that it adds air and makes the mixture lighter. Therefore, it is very important to sift the flour and baking soda. Sifting before adding them to the mixture makes your cake spongy and super fluffy What is the secret to a light sponge cake? Always sift the flour into the cake mixture or mix the baking powder with the flour and then sift. Sifting adds air and thus lightness to a cake mixture. Use a cake flour if available; cake flour tends to be milled more finely, resulting in a lighter cake. Should you beat eggs before adding to cake mix? Beating the eggs before adding them to the batter is very important. This step is often skipped though because many people think it is a waste of time. They just crack the eggs right into the batter and go about mixing. Please do not to skip the step of beating the eggs when a recipe calls for it. Can I use granulated sugar instead of caster sugar in cakes? Can I substitute granulated sugar for caster sugar? Your cakes will still hold up if you use granulated sugar as both the flavour and water content are the same. Caster sugar, however, is much finer and dissolves much easier than granulated sugar which is coarser in texture. Let’s remember Queen Victoria’s birthday, May 24, 1819, with this tasty dessert, as we celebrate our Victoria Day weekend holiday. Victoria Sponge Cake is considered the quintessential English teatime treat. Anna, the Duchess of Bedford (1788-1861), one of Queen Victoria’s (1819-1901) ladies-in-waiting, is credited as the creator of teatime. The cake’s name should really be The Royal Victoria Sponge , as its name harks back to Queen Victoria herself, who was said to enjoy a slice of the delicious cake with her traditional English afternoon tea. After her husband, Prince Albert, died in 1861, Queen Victoria spend time in retreat at the Queen’s residence (Osborne House) on the Isle of Wight. According to historians, it was here that the Victoria Sponge Cake was named after Queen Victoria. In the early Victorian period, afternoon tea consisted of seed cake and fruit cake. For safety reasons, it was believed that children should not eat a cake containing pieces of fruit or seeds. The light, harmless Victoria Sponge was prepared as a teatime treat for them instead! Victoria sponge cake is a British cake. It’s a vanilla sponge cake that is sandwiched with jam and buttercream (or alternatively, whipped cream) filling. It is one of the different types of sponge cake. Others are not typically sandwiched with jam and cream filling. Before we address ingredients, let’s review some important baking considerations. What makes a cake light and fluffy? Most cakes begin with creaming butter and sugar together. Butter can hold air and the creaming process is when butter traps that air. While baking, that trapped air expands and produces a fluffy cake.

Add the remaining icing sugar and one tablespoon of milk and beat the mixture until creamy and smooth. Add the remaining tablespoon of milk if the buttercream is too thick. Spoon the buttercream into a piping bag fitted with a plain nozzle. Yields 6-8 servings. Enjoy and experiment with your favourite fruit, filling, and topping variations. time you make it. Grease an 8-inch springform pan. Sift the flour and baking powder into a medium bowl and set aside. Beat butter and sugar with an electric mixer until light and fluffy. The mixture should be noticeably lighter in color. Add beaten room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Beat in vanilla. Pour in the flour mixture alternately with the milk, mixing until just incorporated. Pour batter into prepared pan. This cake can be served as is, just dusted with confectioners’ sugar. Alternately, cut the cake in half horizontally and sandwich the layers together with jam and buttercream filling. For best results, leave the cake on the counter for 6-8 hours before using it in a cake. This will reduce the amount of crumbling when you split the cake layer in two horizontally. Buttercream Filling 3½ ounces unsalted butter, softened 7 ounces icing sugar 2 tbsp milk
