Pigging Out WHY I LOVE BARBEQUE SEASON

Memorial Day may be the unofficial start of grilling season in much of the U.S., but our weather and culture mean we’re cooking outside earlier (and longer) than most. It just wouldn’t be a Texas spring, summer, or fall without good old-fashioned barbecue filling our neighborhoods with the smell of smoked meats.

more like $15 or $20 for each of us. I’m not sure where he found them, but he brought these eggs with double yolks on the trip. We had a lot of leftover uncracked eggs, so we thought it would be fun to have an egg toss. We had a lot of fun tossing them back and forth until they broke on one of us. Our scoutmaster caught us and wasn’t very impressed with us wasting food — then he found out how much we spent, and he was really unimpressed. He demoted us to $5 a person for the next trip, and we went from steaks and double yolk eggs to oatmeal and bagged soup. Not quite as much fun!

I’ve been cooking over an outdoor flame ever since I was a kid and responsible for the household grilling. We had a charcoal camping grill that sat about 3 inches off the ground and measured only about 1 foot wide, and I’d use that to cook steaks for the entire family. Later on, we used the S&H green stamps earned at the supermarket to buy a propane grill. It didn’t taste as good as the charcoal, but it seemed convenient and heated up super quickly. I was only about 12 years old, and the thing had a bit of a dangerous design. The top of the propane tank rested close to the bottom of the grill, creating little room for error when shutting it off. One time I burned my arm, and though the mark remained only about the size of a quarter, it looked and felt like my skin instantly turned to plastic. I know I’m lucky it didn’t permanently scar!

These days, I’m happiest when I have something cooking outside. I love making smoked brisket and ribs (both beef and pork), and I also love grilling steaks and even hamburgers and hot dogs. I used to have a stick smoker, but now I cheat with a pellet smoker. I also have a pellet grill, a Weber charcoal grill, and an Orion Cooker. And that’s not to mention the flat-top grill I’ve bought but not yet assembled (shhh, don’t tell Wendy about that one yet!).

Luckily, my family is happy to eat whatever I cook for them. We did have one wild incident where what I was cooking dripped grease down onto the coals and caught fire. Sadly, nothing was salvageable and with my mother and father-in-law over for dinner, we decided to just go out. Thankfully,

I also grew up cooking in Boy Scouts. When I first joined Boy Scouts, I didn’t know anything about camping or cooking while I was camping. From what I saw on TV, I assumed you just put a hot dog on a stick and held it over the fire — but the process turned out to be a lot more complicated. Cooking on coals works much better, and I learned to use a Dutch oven to make things like cake, cobbler, and chili. We would still cook hot dogs once in a while because we liked the taste. We would usually cook three meals a day (although sometimes we were just boiling water for our instant oatmeal). One guy would be in charge of buying the food for each trip. One kid liked cooking even more than I did, and though our budget was supposed to be about $10 a kid, he spent

that’s the only time that has happened.

I’ve been watching more about what I eat and can’t really have desserts, but I love making them, so my family calls me a “food pusher” when I encourage them to eat the stuff I can’t. Thankfully, there are no restrictions on meat, so I can grill to my heart’s content — and there are few things I love more than enjoying the tasty fruits of my labor.

You can pair different shades of brown together to create a classic look. Start with a tree bark brown jumpsuit or pants and pair it with a cream-colored brown leather or faux fur trenchcoat. Although you’re wearing the same color, the different shades will contrast subtly for an elegant and classy look. You can also wear a dark brown skirt with a cream-colored brown shirt if you need something to wear on a night out. The clothes you wear can be an artistic expression of who you are. Don’t be afraid to step outside of the box and your comfort zone when it comes to clothes. Mix and match different styles and colors to see what works best for you. Ingredients

• Nonstick cooking spray • 1/4 cup sweet potato, diced • 1/4 cup yellow pepper, diced • 1/4 cup broccoli, chopped • 8 eggs

• Basil, thyme, salt, and pepper, to taste • 1/2 avocado, pitted, peeled, and thinly sliced • Cherry tomatoes, halved • Sriracha hot sauce (optional)

Directions

1. Preheat oven to 350 F and coat a cast-iron skillet with nonstick cooking spray. 2. In the skillet, cook sweet potatoes, yellow pepper, and broccoli over medium heat until soft. 3. In a medium bowl, whisk together eggs, basil, thyme, salt, and pepper.

4. Pour egg mixture into skillet with vegetables. Don’t stir but instead use a spatula to lift the edges of the egg mixture until it is evenly distributed. 5. Transfer mixture to oven. Bake for 5 minutes or until the dish sets. 6. Top with avocado and tomatoes. Drizzle Sriracha on top (if desired).
