March Is Nutrition Month! How I Create Delicious and Healthy Meals

During the ‘80s and ‘90s, the Nouvelle cuisine came out and French chefs moved toward creating more modern and healthy meals. This movement was well-respected within the culinary field; more chefs started cutting down on the amount of cream sauce they use in their dishes and there was a slight shift in focusing on nutrition. But it was never a guiding force in the industry. Chefs didn’t run recipes through a nutrition analysis to see how much sodium or sugar was involved in creating their meals. Many customers adore our shrimp and scallops Rockefeller. Historically, however, this dish is often prepared with your experience, not your health, in mind. For decades, this classic dish from the early 20th century has often been very carb-heavy with its buttery sauce, cheese and bread crumbs. When I create this dish, I try to substitute some ingredients to make it more nutritious. This is my mission when it comes to creating any type of dish — how can I make the dish flavorful but also rich in nutrients that are beneficial instead of detrimental?

March is National Nutrition Month and here at October Kitchen, we’re all about providing tasty and nutritious food for you to enjoy. When reflecting on nutrition, I can’t help but think about how “healthy food” wasn’t always a popular topic. In fact, it wasn’t a conversation that most restaurants needed to have for a long time, including the days when I first started working in the food industry. When I was just starting out as a chef, nutrition absolutely played no role in regard to influencing the recipes I made. The most important thing within the fine dining field is the experience you have while eating. You want your customers to focus on the flavor of the food and have that moment where they roll their eyes to the back of their heads because the meal is delicious. This is what you wanted when cooking for people in fine dining — ensuring they have an excellent experience. But I realized that nutrition and providing healthy meals to my customers also play a part in their experience.

The price of living has been rising, even before the pandemic. As a result, some people are left without a home because they cannot afford their rent or mortgage. It’s heartbreaking to see people who don’t have a roof over their heads, but a man from New Jersey has taken action to help these people in need. LOCAL MAN MAKES A DIFFERENCE IN HIS COMMUNITY Offering Free Housing to Those in Need

When the pandemic first hit, Arya had firsthand experience of how difficult it was to find affordable places to stay. He told CBS News, “People started getting quarantined, lockdowns started happening and we started seeing an influx of unhoused people. You know, they just couldn’t afford rent anymore, so they’d come to our motel.” Arya used TikTok to create funny videos of his hotel, and that’s when he had the idea of offering free rooms to his followers who needed a place to stay. He soon launched a Free Room For You program and advertised it on social media. This idea skyrocketed and soon, people began coming to the motel for a room. Since most of these people couldn’t afford housing, they donated food and toiletries to cover the cost. Local college students would donate supplies from their food pantry to help Arya with the

though the Ritz bread crumbs are delicious, they’re high in fat. So instead, I use gluten-free panko crumbs that provide the same flavor without all of the fats. We are preparing food for people to reheat in their homes, so we like to ensure they get all of the nutrients they need within their meals. We avoid as many carbs, sodium, fat and sugar as possible and pack the dishes with vegetables and proteins. You can still taste all of the wonderful flavors within the food while not experiencing any guilt — that’s the best part about creating meals. Creating new recipes and designing the menu is very exciting because nutrition is like a love language that I learned how to speak fluently. My

Carbohydrates, or carbs, are an essential part of a healthy diet — it’s your body’s primary source of energy, too. You can obtain carbohydrates from sugars, starches and fibers. But there is a difference between good carbs and bad carbs. What is a ‘bad’ carb? A bad carb is usually described as a simple carb. These are easy-to-digest sugars such as candy, baked goods, soda, white bread, white rice and refined pasta. Because these carbs can be digested quickly, they can spike your blood sugar and make you feel hungry sooner. But not all simple carbs are bad. For example, fruits and dairy products contain simple carbs and are very different from those in cookies and cakes. What is a ‘good’ carb? Complex carbs are known as a good type because they are filled with nutrition. These carbs take longer to digest, making you feel fuller longer. Whole grain food provides you with the best complex carbs over processed food. Some examples of whole- grain foods are whole wheat flour, brown rice and oatmeal. They are rich in fiber and nutrients that your body will love. Fibers, Starches and Sugars — Oh My! Whether carbohydrates are simple or complex, they are broken down into three categories: fibers, starches and sugars. • Fiber is a complex carb that isn’t fully broken down when digested. It passes through your intestines, helps digest other nutrients and makes you feel full longer. Good sources of fiber can come from beans, fruits, vegetables, nuts, whole grains and brown rice. • Starches are complex carbs that are digested slowly and provide you with vitamins and minerals. Starches can be found in fruits, corn, potatoes and whole grains. • Sugars are simple carbs. This means that they are digested quickly. Foods like candy bars don’t provide your body with nutrients. Likewise, some fruits have sugar but give your body essential fibers and starches. A healthy diet begins with a variety of meals and eating in moderation. It’s okay to eat some bad carbs as long as you’re also giving your body good carbs, too.
