Smokehouse Installation Checklist

Use the following checklist from Fusion Tech to ensure your facility is prepared for a smokehouse installation. Check with the manufacturer for specifics. Smokehouse Installation Checklist

Floor & Exhaust Completed Item

Floor under oven is smooth without peaks or crowns.

Slope, if required, is 1° or less. Anything more will affect the opening of doors.

[Poured in Place Grillage Option] Concrete is flush to (NOT over) the top of stainless embedded grillage. Failure to do so can affect structural integrity and cause door binding. Exhaust stack installed and attached for proper ventilation.

Utilities Completed Item

[Steam Only] Steam plumbed & terminated to proper locations. Refer to manufacturer’s specifications.

[Gas Fired Only] Natural gas plumbed & terminated to proper locations. Refer to manufacturer’s specifications.

[Gas Fired Only] Proper valves, regulators, drip legs installed prior to the burner. Refer to manufacturer’s specifications. [Gas Fired Only] New gas lines have been cleaned and purged to the last valve prior to the burner. Refer to manufacturer’s specifications. Clean, 50 psi or greater, 50 micron or less filtered air connected to air control box. Refer to manufacturer’s specifications. [Air / Water Atomization for Humidity] Clean, filtered, softened, 63 micron or less water plumbed to humidity solenoid valve. Refer to manufacturer’s specifications. CIP zones water has been plumbed, terminated, and lines flushed. Refer to manufacturer’s specifications.

Product shower water has been plumbed, terminated, and lines flushed.Refer to manufacturer’s specifications.

Conduit and wiring is ran and pulled to main electrical box. Refer to manufacturer’s specifications.

Conduit and wiring is ran and pulled to the I/O box. If mounted to side of main electrical box, no additional installation is required. Communication wiring, such as CAT5, ran to controller for offline communication. Refer to manufacturer’s specifications.

Accessories Completed Item

[Smoke Generator] Air, water, and power plumbed to the smoke generator. Secondary conduit from smoke generator to main control box installed for input signals. Refer to manufacturer’s specifications. [Liquid Smoke] Air and electrical installed for liquid smoke generator. Refer to manufacturer’s specifications.
