I know there are a lot of people out there, and maybe some of you reading this, who can remember the exact moment you met your spouse. While I can’t remember the first time I met Kellee, I do remember our first date. It was on Oct. 27, 2012. We went to a restaurant called Bravo’s and we had a waiter named Tony. The date ended up being pretty eventful, mostly thanks to Tony. He was one of those waiters who’s incredibly energetic. He kept us on our toes the whole night, messing up Kellee’s order of chicken Parmesan (her favorite dish) the first time, but getting it right the second time. After that dinner, we went out to see a movie (remember when you could go to movie theaters?) and just had a great time. It was, by all accounts, a pretty traditional first date. But because it was our first date, it was special to us, and when Valentine’s Day came around, I wanted to show her I remembered that. On our first Valentine’s Day, Kellee was living in Akron, about 45 minutes away from where I was living at the time. She had just finished her shift and was heading over to my place for dinner. That gave me enough time to make her favorite meal, chicken Parmesan, the right way. After Bravo’s messed up her order on our first date, I thought making it for her for Valentine’s Day would be a fun MY AND KELLY’S FIRST DAY AND FIRST VALENTINE’S DAY TOGETHER A SECOND CHANCE AT A FIRST DATE MEAL

memory of our first time out together. The only catch was that I had never made chicken Parmesan before in my life!

While the noodles were easy enough to get right, I had never breaded chicken before. I worked as quickly and carefully as I could to get the meal right before she arrived, and looking back on that night, I would say it was a success. Kellee told me that the chicken Parmesan was good, and I don’t remember either of us getting sick, so there’s that. I joke that our first Valentine’s Day together was all it took for me to convince Kellee to be with me forever. I had her hook, line, and sinker with my cooking skills! When I think back now, however, something occurs to me. Since that first date, we’ve been together eight years. We’ve been married five of those years, and we’ve since had a daughter together. Yet, in all of that time, while so much has happened in our lives and our relationship, I don’t think I ever made chicken Parmesan again after that first Valentine’s Day! I can’t figure out why I never made that dish again, but maybe I’ll have to find a good chicken Parmesan recipe for this upcoming Valentine’s Day. I hope all of you can find ways to make your Valentine’s Day similarly special for the person you love this year. Dinner in a bustling restaurant and a night at the movies might be off the table, but I know you’ll still be able to think of something special.

CHICKEN PARMESAN WITH SPAGHETTI

INGREDIENTS

• 4 boneless, skinless chicken breast halves • Salt and pepper, to taste • 1 egg, beaten • 1⁄2 cup Italian breadcrumbs • 4 tbsp butter • 2 cups marinara sauce

• 4 slices mozzarella cheese • Parmesan cheese, grated • Spaghetti, cooked according to package directions • 2 tbsp chopped parsley, for garnish (optional)

DIRECTIONS

1. Wrap each chicken half in waxed paper and pound chicken to flatten. 2. Salt and pepper to taste. 3. Dip each half in egg; then in bread crumbs. 4. Fry in butter in hot skillet, turning and browning for about 6 minutes or until chicken is cooked through. 5. Remove from skillet. 6. Lower heat, add marinara sauce. Heat thoroughly. 7. Add chicken. 8. Place slices of mozzarella on top of chicken. 9. Sprinkle with Parmesan. 10. Cover and cook until cheese is melted. 11. Serve with spaghetti. Garnish with parsley and more Parmesan cheese.

Nothing says “I love you” more than equipping your children with important knowledge they'll need for the rest of their adult lives.
