INTRODUCTION
Welcome to the Pinnacle Asian Beverages guide, showcasing some of the fantastic brands coming to stores in July. Where to start? A project which began over 18-months ago, the vast majority of products have been sourced direct from the supplier (with the help of translators), meaning we’re getting both a very authentic premix and glass range but also at great margins. Look out for the back labels on the sake range, which will help you and customers navigate the fantastic world of sake more easily. My favourites are the Ikekame Red Turtle Junmai Daiginjo for a special occasion and the Konishi Kokuagari Junmai for a midweek sushi train. We’ve also got a cracking premium gin in the Kanoshizuku, which will be a winner for those seeking a very different gin experience. A big shout out to the Pinnacle Spirits & Premix category team. SAKE Sake is an intriguing and unique alcoholic beverage. Originating in Japan, it is a drink made from white rice cleaned of the husk, water, yeast and koji (the starter). It is close to beer because it is brewed from grain, but it is not malted or carbonated, so it is not beer. Some describe it as rice wine, yet it is not wine nor a spirit. The magical koji converts rice starch to sugar for the yeast to start fermentation. A rice ‘polishing’ or milling process determines the quality of sake. Sake is graded on the polishing percentage. If the rice grain is polished or ground away to 50% or less of its original size, the sake will be of superior quality. The origin of sake is largely unknown but first references to the drink can be found in the Kojiki, Japan’s first written history in the Nara period of the 6th century. Sake comes in an incredibly diverse range of styles and flavours, from dry to sweet, fragrant to complex. It can be influenced by terroir and region and is consumed both cold and warm. Premium sake is usually appreciated chilled to enhance subtle aromas and flavours. To discover sake is to explore alluring flavours created from ancient traditions. Kanpai!
JUNMAI – SHU Junmai-shu is a type of sake made using rice, water, and koji with no added alcohol. Junmai has a full flavour that is clean and structured.

HOW TO DRINK SAKE Sipping and savouring is the best way to enjoy sake. Think about how you would appreciate wine. Pour and swirl to release the aromatics before enjoying the whole experience of the palate. Sake aromas and flavours can vary from fruity and floral to earthy and savoury. For some of the sakes, we have designed a bespoke label that provide the flavour style, finish style, and also serving temperature. Serve sake from a ceramic vessel called a tokkuri into small cups called choko. Try to remember to not pour your choko. In Japan, this is considered impolite. Keep your eye on the chokos of your fellow guests; pour with both hands. Higher quality sake such as Junmai Daiginjo-shu or Junmai Ginjo-shu is preferably consumed chilled to appreciate the subtle characters of the sake. Sakes such as these are sometimes served in wine glasses for extra panache. Sake is best stored in a cool/cold environment out of direct sunlight and upright.

JUNMAI GINJO – SHU
JUNMAI DAIGINJO–SHU
Junmai Ginjo-shu is next level. Its production is labour intensive and uses rice polished to a higher degree of at least 60%. It is fermented at colder temperatures for longer, giving the Ginjo-shu a distinctive flavour profile that is elegantly light and aromatic with fresh fruit characters.
Daiginjo-shu is even higher quality again. This sake is fermented at a colder temperature and applies greater control in the brewing process with at least 50% highly polished rice. It is the highest grade of sake and is light in texture, exhibiting fragrant, fruity and complex characters with subtle nuances of flavour.

Made with Miyama Nishiki rice in the Miyagi Prefecture, this delightful sake is well-rounded with a mellow and rich palate. A premium sake with a rice polishing ratio of 50%, it exhibits aromas of gentle incense with a clean and smooth finish.
Another rare sake brewed with black koji from Ikekame brewery in the Fukuoka Prefecture. Its Turtle Red sake is aromatic and complex and exhibits a fine acidity and flavours of red berry fruit and umami on the palate with a rich texture and clean finish. Pair it with finely sliced Wagyu steak.

Australia has come to love Asian cuisine in all its forms. Now is the time to embrace Asian drinks with the same enthusiasm. There is the hugely hot right now shōchū spirit, or the sweet Japanese plum liqueur, umeshu. For lovers of citrus the East Asian citrus fruit, yuzu, makes a delicious liqueur or for gin fanatics, an Eastern take on a classic Western drink using native Asian botanicals. There is a unique and deliciously different Asian spirit or liqueur waiting to be discovered. SPIRITS
UMESHU Umeshu is a sweet Japanese liqueur made by steeping the Japanese plum, ‘ume’ in sugar and a spirit, usually shōchū. The ume was brought over to Japan from China 1000 years ago, and although it is known as a plum, it is an apricot. Umeshu is also known as plum wine but is a liqueur. The Japanese often make umeshu at home. The taste of umeshu is sweet and sour and can be enjoyed straight up, on the rocks, with a splash of water or in a cocktail.

was kuchikamizake or mouth-chewed sake (the enzymes from the mouth helped break down the starches into sugars for yeast), and because it was regarded as a gift from the gods, this style is associated with the Shinto religion.

JAPANESE GIN Other than juniper as a requirement to be classified as gin, Japanese gin showcase the unique botanicals from Japan including: yuzu, shisho leaf, green tea, sansho pepper, cypress wood, ginger, pine needles and kuromoji.
SHŌCHŪ Shōchū is a Japanese spirit that can be distilled from either rice, barley, sweet potato, sugar or buckwheat. It’s lower in alcohol, 25-35%, than most other spirits with an earthy and savoury flavour. It is consumed straight up, on the rocks or as a mixer. Popular in Japan is the chūhai, a shōchū highball mixing the spirit with ice, soda and flavouring such as apple and lemon. Shōchū is becoming increasingly popular in Western markets, so much so Shōchū bars are popping up in the Big Apple.

A uniquely crafted artisan gin from the Yomeishu distillery combines 11 botanicals dominated by Kuromoji or Lindera umbellata, an aromatic tree native to Japan. The gin combines two spirits, one distilled with the fresh fragrant Kuromoji and the other with the final ten botanicals, including the obligatory juniper. The final result is a complex gin that is elegant and fresh as a green forest with the scent of Kuromoji and characters of citrus, juniper and spice. Drink it on the rocks or as a base for a martini.

MAKGEOLLI KOREAN RICE WINE Makgeolli is one of Korea's oldest alcoholic drinks and a staple drink in the farming community. Made from rice, water and a starter known as nuruk, it is low in alcohol unfiltered raw rice wine that is milky-white or cloudy in appearance and lightly sparkling with light viscosity. Usually, it exhibits a mild sweetness with a slight tang – you could say it is sweet/tart in flavour. One of the benefits of makgeolli is its natural probiotics. When the drink settles, two distinct layers are visible. The transparent top layer is yakju or cheongju, and the sedimentary layer is takju. Sometimes the yakju is separated and consumed on its own or distilled into soju. In Korea, you can order Makgeolli on tap in small ceramic bowls.
