Message from Steve old - CEO Tasmanian Hospitality Association It is with great pleasure that I present to you, the Tasmanian Hospitality Association’s 2021 THA Awards for Excellence nomination booklet. There is no doubt 2020 has been a difficult year for our industry and our community. The COVID-19 Pandemic has changed so many aspects of the way we live, work and operate and it has forced us to adapt, change and embrace a new normal in order to survive and thrive. The gala awards night is an important time for industry representatives to come together as we emerge from these challenges stronger, more resilient and more united than ever. I hope that the 2021 Awards for Excellence is an occasion to look forward to for you and your staff. Please read this nomination booklet carefully as there has been some exciting changes to the process following consultation with past attendees. If you haven’t already, I would encourage you all to consider nominating your business in the relevant categories to highlight and celebrate your achievements over this challenging period. The THA Awards for Excellence are respected and valued as a hallmark of the premium hospitality experience Tasmanians and tourists have come to know and expect. The 2021 awards are particularly special. The THA Awards for Excellence winners will not only be named Tasmania’s best in each respective category, but they will also represent their home state at the Australian Hotels Association National Awards to be held in Hobart in late 2021. We understand the current environment which you are all working in and the challenges you are enduring. This year, a strong focus will be on businesses which strive to provide their guests and/or customers with an all-round experience which we as an industry, can be proud of. We have a broad market starting with our local customers through to hopefully our international visitors that we cater for, providing beautifully appointed rooms, using some of the best produce in the world being served in some of the finest venues in the country and presented by some of the best staff. Eligibility Tasmanian hospitality businesses that meet the nomination criteria; • Non-members who win an award at state level and wish to nominate for entry into the Australian Hotels Association (AHA) National Awards, must be a financial member of the THA (the Tasmanian branch of the AHA). • You are encouraged to nominate your venue for as many categories (within the guidelines) as you feel best reflects your core business. • Achievements or activities referred to within your entry must relate to the qualifying period, 1st July 2019 to 19th May 2021. • An entrant that has multiple venues must enter each venue separately. • If a category has less than three nominations, it may be removed from the awards and you will be advised accordingly. Entry Fees THA Members - $0.00 Non-Members - $100.00 per venue Judging Process Venues can be judged any time after receipt of your nomination. A panel of independent judges will judge all awards entries. The chair of judges (in consultation with the THA) reserves the right not to accept, or to suggest a different category for nominations, if in their opinion, the nomination is inappropriate for the category concerned. Awards are judged by site inspection, written submission or both - this can include both website and social media presence. Each venue is judged by a detailed score sheet. Please ensure your eligibility by examining the judging criteria for each category. Entrants who have won awards at state level may then be eligible to nominate for entry into the AHA National Awards. Please note that winners in categories highlighted with an asterisk (*) are eligible to nominate at a national level. Site Visits In most cases a site visit of the venue is required and in most cases the judge will remain anonymous. No site visits will be conducted on public holidays. Written Submission Format Nominees are required to read the judging criteria and guidelines closely to ensure that all relevant information is supplied to the judges in the submission. Each criteria point must be addressed. State the question/criteria then your answer - please keep comments concise and relevant. Unanswered questions will attract zero points. If you feel you cannot answer a question and that the question is not relevant, please explain your reasons within your submission. The overall submission should not exceed 1500 words unless otherwise stated. Please note, judges will only be interested in the content of the submission and relevance to the criteria and not what the submission looks like. Accommodation Categories Nominees in these categories will be invoiced by the THA for the cost of one night’s accommodation including the provision of meals as required for judging. If you require a particular style of room to be judged, please make note of this on your nomination form.

Dining Categories Nominees in these categories will be invoiced by the THA for the cost of meals as required for judging. If your venue has more than one restaurant and you would like to enter in more than one dining category, you may do so however, each restaurant must be entered separately and each restaurant will also be invoiced separately. For all dining categories - excluding Best Breakfast Venue - judges may visit any service and judge according to the criteria. Please make a note on the nomination form if you would prefer to be judged on your lunch or your dinner service. General Categories Nominees entering General Categories may be invoiced by the THA for the cost of food and beverage where judges deemed necessary to judge specific criteria. Best RSL, Sporting or Community Club Clubs nominating in this category, can also nominate in those categories highlighted with a ‘Clubs Eligible’ icon. Entry Details & Requirement Please ensure that your venue has a contact person listed on your nomination form as well as your venue’s opening hours. The judges may contact your venue for a site visit or for further information if required. By nominating in any category, your venue will agree to: • Have the venue name included in the following: menu booklet, all media and all audio visual. • Pay the associated entry and/or judging costs by the due date stated on your tax invoice. • Agree to accept nomination into the AHA National Awards for Excellence 2020 being held in Darwin in August 2020 shoud your venue win in any of your chosen categories. Photos and Logos All nominees must supply a minimum of four (4) images of the nominated establishment. All photos must be of high resolution and supplied either by Dropbox or similar sharing platform or supplied on a usb. Judging Report The judging reports prepared by the judges provide valuable feedback into how your venue performed, areas for improvement and areas in which your venue excels in. Best Marketed Establishment * 100% Written submission not exceeding 1500 words. Each criteria point must be addressed. This category recognises venue excellence regarding the approach taken to market their venue. Judging Criteria • Evidence and quality of research in the development stage of marketing strategy • Evaluation results of research and conclusion • In-house marketing and promotional material to support marketing strategy • Evidence of media exposure external to the organisation • Evidence of the positive use of social media as part of your regular promotional campaigns (please include what forms of social media are used and how they are managed) • Evidence of the originality, creativity, brand messaging, brand appropriateness and the engagement of your social media activities • Increase in popularity as a result of marketing strategy (i.e. covers, occupancy) • Consistency of branding • Evidence of environmental sustainability best practice throughout venue Best Meeting and Events Venue * 80% Banquet or Events Pack and 20% Anonymous site inspection. This category recognises venues that provide excellence in their facilities and services for meetings and events. Judging Criteria General • Décor, design, characteristics, cleanliness and hygiene • Size, flexibility and capacity of each available function room • Built in Audio Visual facilities/in house AV provider • Quality of table setting (glassware, crockery and cutlery, table linen) • Special promotions • On-site support staff • Assistance with optional extras i.e. theming, entertainment Food and Beverage • Food and beverage facilities available/originality/variety • Diversity and value of menu packages Service • Professional and outstanding customer service • Relevant staff training for functions/events staff • Support of RSA practices Marketing • Description of clientele / evidence of market research • Conference facilities successfully and professionally marketed • Administrative procedures for managing bookings and functions

Outstanding Achievement in Training and Workforce Development * 100% Written Submission not exceeding 1500 words. Each criteria must be addressed. This category recognises venues that have a demonstrated commitment to improving customer service and experiences through employee training. Judging Criteria • Contribution to raising the professionalism of the industry • Caters to business needs (evidence of collaboration with training provider(s)) • Innovation in training (how does your training demonstrate innovation in developing your workforce?) • Support of external training programs including RSA/RCG and other industry courses • Assessment of staff competency assessed by management • Retention of staff as a result of initiatives • Procedures for re-evaluation of staff training • Evidence of internal training, schedules, training manuals etc. • Evidence of sustainability best practice in business training, workforce developement practices and programs Outstanding Community Service and Achievement * 100% Written Submission not exceeding 1500 words. Each criteria point to be addressed. This category recognises excellence by a venue in providing a wide range of support to their local community Judging Criteria • Evidence of active participation and support for community groups and activities • Promotion of the hospitality industry to community and groups • Participation in community life through venue • Evidence of financial assistance to community • Demonstrate profile achieved through community work • Communication of achievements through your business • Evidence of sustainability best practice Veolia Best Environmental and Recycling Practice * 100% site inspection. This category is sponsored and judged by Veolia. In nominating in this category, you agree to allow Veolia representatives into your venue for judging purposes. Judging Criteria • Policies in place within your venue that support environmental best practice • The quality and quantity of your in-house recycling programs • Level of innovation • Communication and training (evidence of staff awareness and training)

GENERAL CATEGORIES Best Specialty or Themed Bar * 100% Anonymous site inspection. Recognising venues within Tasmania that offer a unique or themed bar experience i.e. cocktail bar, spirits bar, Irish bar, Craft bar Judging Criteria General • Offering unique characteristics and/or theme • Integration of theme throughout eg. music, decor etc. • Ambience, lighting and music • Hygiene and cleanliness of venue • Range of promotional products Bar Services • Beverage offerings provide focus on unique characteristics and/or theme • Value for money • Quality and presentation • Cleanliness of glassware Staff • Friendly and courteous • Support of RSA practices • Appropriate, efficient and well-presented staff • Staff product knowledge

Best Bar Presentation and Service * 100% Anonymous site inspection.

This category recognises a bar or hotel that offers a memorable experience for patrons with an emphasis on excellence in customer service. The judged area will be specific to the bar area. Judging Criteria General • Ambience, lighting and music • Hygiene and cleanliness of venue • Range of promotional products • Bar presentation to be of the highest standard • Efficiency of bar operators • Popularity of the establishment Food and Beverage • Variety of beverages available • Variety of bar food available • Cleanliness of glassware Staff • Professional and outstanding customer service • Well presented and efficient staff • Support of RSA Practices • Staff product knowledge and knowledge of local area This category recognises venues who provide entertainment in the way of live bands and performances focusing on support for local talent. To assist judges, venues must provide a program of events or gig guide to allow for judges to schedule their visits. Judging Criteria General • Decor, design and ambience relative to the space • Quality, appearance and comfort of venue • Cleanliness and hygiene practices observed in all areas • Quality sound and lighting systems in place relative to space • Effective marketing of venue and upcoming events and activities • Website - ease of search and finding information • Social media presence Live Entertainment • Overall quality/suitability of performance • Quality of stage, dance floor, sound and lighting facilities • Evidence of live entertainment on a regular basis • Evidence of support for local musicians and acts Food and Beverage • Reasonable variety of alcoholic and non- alcoholic beverages available • Snack food offered • Relative pricing, variety and quality Staff • Friendly and courteous • Support of RSA practices • Security and crowd control measures in place • Staff knowledge of entertainment offered Best Live Music or Entertainment Venue * 50% Website visit - 50% Anonymous site inspection.

Best Retail Liquor Outlet * 100% Anonymous site inspection.

This category recognises an outlet offering a customer focused, well-stocked and well-designed retail liquor space. Nominees must have a drive-in or walk-through bottle shop or a combination of both. Judging Criteria • Design, layout and lighting, ambience • Evidence of effective venue marketing • Efficiency and appeal of stock presentation • Effective special promotions • Cleanliness and hygiene of premises • Pricing relative to target market • Telephone technique Store Presentation • Entrance clearly and easily accessible • Displays (Inc. windows) merchandise appealing • Signs and price points professionally written • Tasting facilities Beverage • Local, national and international variety of beers • Local, national and international variety of wines • Local, national and international variety of spirits Staff • Presentation of staff • Knowledge of products • Acknowledgement of customer and customer’s needs • Pleasant and courteous during sales

Best New Tourism Initiative * 100 % Written Submission not exceeding 1500 words. Each criteria point must be addressed Recognising businesses that introduce new initiatives outside of their core business to attract visitors (intrastate, interstate and/or international). The new initiative must have been introduced within the qualifying period – 1st July 2019 to 30th June 2020. The term ‘initiative’ can include for example, an event, marketing project, experience, service or product designed to appeal to and attract visitors to the business. Judging Criteria General • Provide details of the new initiative and the reason(s) for introducing it • Explain your core business, existing market and demographic and those being targeted using the new initiative • Identify the percentage of business generated from tourism, pre and post initiative • Evidence of the research undertaken and development of a marketing strategy • Evidence of new initiative launch, use of media, social media or other campaigns to promote the initiative • Proof of success in popularity, brand awareness, testimonials • Evidence of initiative’s success and how the business has been impacted

Best Guided Tour Experience * 50% Website visit - 50% Anonymous site inspection Cost: Nominees in this category will be invoiced the cost of the tour experienced for the purpose of judging Recognising venues and tour operators that offer a unique guided tour experience; incorporating food and/or beverage. Judging Criteria General • Interaction/involvement with a local tourism authority/ fraternity/organisation • Development of marketing strategy • Proof of marketing campaign • Measure of popularity, testimonials, evidence of successful tours etc. • Effective marketing strategy • Administrative procedures for managing bookings and functions • Environmental sustainability • Value for money/ customer satisfaction • Innovation within tour operation • Quality of attractions • Appeals to domestic and international market Food and Beverage • Ability to offer a variety of hospitality services • Originality, variety and presentation of food and/or beverage • Support of local produce Staff • Willingness to engage/involvement with customers • Knowledge of product (i.e. wine, environment, history and/or culture) • Staff knowledge of surroundings, tour operations etc. • Professional and outstanding customer service Best Sports Bar * 100% Anonymous site inspection. Recognising excellence in hotels with a specific emphasis on sport as a primary form of entertainment. Judging Criteria General • Décor, design and ambience relative to theme of a sports bar • Hotel facilities, lighting, music • Overall hygiene, cleanliness and safety Entertainment • Integration of sporting vision • Effective promotion of events and in-house activities • Quality and variety of sporting artifacts • Venue provides televised sporting programs • Participation with sporting teams and/or clubs Food and Beverage • Selection, price, variety and quality Staff • Friendly, courteous and well presented staff • Support for RSA and RCG practices • Staff knowledge of sporting entertainment offered

Best Draught Beer Quality * 50% Site inspection of back of house and cool rooms.

50% Anonymous site inspection. Prerequisite to enter award, venue must comply to AS5034 (installation and use of inert gases for beverage dispensing). Judging Criteria Cellar / Keg Room and beer systems cleanliness and management • Cool room cleanliness - keg coupler, cellar boy, beer lines and tap cleanliness and functionality • Keg freshness - stock rotation / stored correctly Glass Management • Glass cleanliness - glass washer cleanliness and correct chemicals used Beer Presentation • Pouring technique • In glass appearance - true to type ( taste, aroma, texture) • In glass temperature - appropriate head on beer • Knowledge of correct beer pouring technique • Handling of glassware

Judging Criteria General • Hotel - decor, ambience and cleanliness • Staff and Service - professional, courteous and efficient • Food - variety and presentation of menu, pricing, presentation and quality of food • Beverage - variety of offerings, pricing and quality • Telephone technique of staff Outdoor Area • Quality of fit out, furnishings and fittings • Evidence of how the area enhances overall standard of premises • Cleanliness and maintenance • Atmosphere and ambience • Adequate heating and cooling • Safety and Security • Utilisation of the area by patrons • Evidence of adequate disposal of smoking litter • Compliance with tobacco legislation

Best RSL, Sporting or Community Club 100% Anonymous site inspection. Judging Criteria General • Natural ambience, lighting and music • Hygiene and cleanliness of premise • Overall presentation of venue • Support for local community • Interaction with local community • Involvement in RSL, community or sporting related activities Food and Beverage • Value for money • Presentation, variety and quality of food • Variety of alcoholic and non-alcoholic drinks provided • Espresso coffee available Staff • Professional and outstanding customer service • Support of RSA/RCG practices (if relevant) • Staff involvement with customers

This category recognises excellence in wagering hotels. Emphasis on customer service is central to this award which is sponsored and judged by Tabcorp.
