The Seven Oaks Book Club meets each month to discuss books on a reading list which is selected by mutual consent of the Book Club members. All members of SOCC are cordially invited to attend. House &Social Update by Rich Gargan, Chairman House & Social Committee
In this time of self-quarantine and limited access to everything, the thing we all want to do is GET OUT and DO SOMETHING!!! We in the House and Social Committee understand this and feel the same way, but unfortunately, we are still bound to Covid-19 restrictions. With that being said, I would like to take this opportunity to share with you some recent accomplishments, things that are going to happen very soon and some future social events that we are planning to have as soon as we are able. Recent Accomplishments: • The Oak Room & Grille are now open and following current guidelines • New grill and cook top in the Grille Kitchen • Improved service in the dining rooms • New menus in the Oak Room & Grille • Modified Pasta Night & Sunday Brunch • The Gyms & Pools are open and in use with some restrictions • Grand Island & Oaks Snack Bars are in operation • Aqua Fitness Classes Coming Soon: • New carpet, table skirts, drapes, granite and artwork in the Oak Room • More Group Fitness Classes that follow current guidelines • Continued improvements to service • Ongoing updates to our Dining Menus, based on member feedback Plans for the (Hopefully) Not-So-Distant Future: • A complimentary “Welcome Back” event for the entire membership featuring BBQ and other yummy stuff; kids games; fun Tennis, Pickleball and Golf events and more! • Concerts • Poolside BBQs • Bocce Ball Play & Tournaments • Taco Tuesdays and other great specialty nights … and of course all the other great Social Events that we offer, once our Club Life gets back to normal! On behalf of our House & Social Committee, I would like to thank the entire membership for ‘sticking it out’ with us during this unusual time. Our goal is to make Seven Oaks the best that it can be, and we look forward to seeing you around, enjoying all that the Club has to offer.

Maintining Your Kitchen Knives by Corey Dye, Interim Executive Chef
I have really enjoyed being able to get out of the kitchen and meet many of you while you are enjoying lunch, dinner, and brunch at the Club. While getting to know you, I have been asked by some about maintaining your kitchen knives. I put together tips on how to keep your knives sharper, longer, and how to sharpen those dull ones. How to Use a Honing Steel Hold the steel by the handle with the top of the steel at the 12 o’clock position. With your knife in the other hand, hold it at a 15-degree angle to the steel and slowly pull the knife down the steel. Do the same to the other side of the blade. It is very important to keep count of how many passes you have done on each side and make sure that they are the same - failure to do this can result in an uneven edge! Sharpening your Knives The first and most important thing to do is invest in a good wet stone. I recommend getting a stone with a 400-grit on one side and 1000-grit on the other. The 400-grit builds the edge of the blade, while the 1000-grit sharpens it. Once you have your stone, you need to soak it in water for at least 30 minutes before use. If your knife is dull, start on the 400-grit side. Place the knife on the stone and hold it at a 20-degree angle. With light pressure, slide the knife up and down the stone with the edge going away from you. Do this 30 times on both sides of the knife, then flip the stone over and do the same thing on the 1000-grit side. Once you have sharpened your knife, run it against your honing steel to ensure that you have a smooth blade.

Once again, I want to thank all the kind members for stopping to say ‘Hi’ and welcoming me to Seven Oaks Country Club. I am truly blessed and excited to be given the opportunity to care for and create a first-class golfing experience for all to enjoy. My team and I have many challenges ahead of us, but my promise to you is that we will not stop finding ways to improve your golfing enjoyment! I have already compiled a very long list of improvements that need to be implemented to achieve the best daily and consistent conditions. Some of these improve- ments have already been done, some will happen over the next several months and some we’ll start immediately but will take several years to accomplish.
We have some serious Agronomic issues that should have been addressed on an annual basis but were not. Some are obvious to the eye and others may not be and they need immediate attention.
Weeds. I have never seen a golf course with such a bad weed infestation problem. Truly unacceptable!! We have made several weed applications and still need to make three more – at a minimum. I will not be able to produce a weed-free course this year or even perhaps next year, but I guarantee our weed issue will diminish substantially and you should have weed-free playing conditions in eighteen to twenty-four months. It is all about the timing of applications… and persistence.
Thatch. A non-visible issue that is extremely serious to the survival and health of our golf course. Again, as like our weed issue, I have never seen a thatch is- sue this severe! The photos in this article are of thatch taken from our Tees and Fairways. As you can see, we have about two inches of thatch compromising the health and playability of our course. Generally, a thatch layer should be no more than a half-inch. This enormous thatch build-up is causing purple, thin and dead turf areas all over the tees and fairways. As a result, we are using way too much water to keep the thatch wet, yet never is the soil beneath the thatch getting wet. This is a serious issue and we are addressing it as I write this article. You will notice some minimal disruption on the tees and fairways, but we have no choice. This practice of dethatching should have been and will be done twice a year. It will take the crew and myself about three years to correct this is- sue. Once I get a handle on these more serious issues, your course will require far less water, have no inconsistent wet areas, have premium turf quality, daily Championship conditions and thousands of dollars saved on the electricity to run our Pump Station.
One last quick note, we are also working on the appearance and playability of our bunkers. This process will take about a week and a half.

Now, I need to beg for your help!! Please help me turn this golf course into the best in the state. I’ve given you my promise to work as hard as I can to create the best, but I can’t do it without a tiny, tiny bit of your help. I just mentioned we are starting to work on improving our bunkers. Each bunker is designed with a low entry and exit point - please do not enter any bunkers from the high side, collapsing the sand face. When you do this, you are hurting your fellow members. No one wants to play a golf shot from a “FRIED EGG” lie and that’s exactly what you will get if you continue to crush the sand faces down by entering from the high sides. So please, walk to the low entry points and enter and exit at those locations. Lastly, I hate ropes and stakes on a golf course… it looks so public!! Unfortunately, until I can get this course back to being managed cor- rectly, we must overwater, which means wet areas and ropes and stakes. Please, help me out by NOT RUNNING OVER Cart Directional signs and roped off areas. Think about all the extra cart traffic since Covid-19 started… it’s doubled, which makes your small amount of help even more critical to our success.

This is the best way to get in to tennis. If you don’t have a racquet or you feel your racquet is outdated, don’t worry, we have plenty of Demo racquets you can try out. Liveball Thursdays 9 - 10:30am. $15 per person. This program is a fast moving, very intensive hitting and drilling course. The emphasis is on playing points and hitting ‘zillions’ of balls. Must have a USTA rating 3.5 and above. onni at 714-366-2985 for Thursdays.
Summer Junior Advanced Drills Tuesdays 12 - 1:30pm & Thursdays 11:30am - 1pm Ages 11-18
On court drills will include point play, dead ball drills, fitness drills and mental toughness skills. Match play focuses on players using tactical and technical skills developed during practice.
